Jess Scoble is the woman behind Allan St’s newest coffee house, Burnt Butter. We fired a few questions at the comparitive newcomer to the Kyabram coffee scene, and this is what she came up with.
When did you open? Two months ago.
What makes a good coffee? Consistency, a clean coffee machine and, of course, silky smooth milk.
Who are your baristas? All our girls have received amazing training from our specialty coffee trainer that travels the world teaching everything there is to know about coffee.
What is involved in becoming a barista nowadays? There is so much online training that can be very beneficial in showing the fundamentals. But you can't beat hands-on training with your own coffee machine.
Any loyal customers yet? I believe people are willing to try something new to find the most enjoyable coffee for their tastes, so they will try other places.
Where was your favourite, before opening? We are spoiled for choice as there are so many beautiful coffee shops around our region.
Is the morning still the most popular time for coffee? In short, yes. But in my time this has changed and we don't see a big difference from morning coffee to during the day.
Take away or drink in? I haven't put my finger on why, but coffee can and does change from drinking out of a takeaway over beautiful crockery. Maybe it has something to do with being able to relax and savour the moment over being on the run.
How much coffee do you go through in a normal month? Our per kilogram of coffee is increasing weekly and I am confident we will reach our targets.
Most popular coffee order? 50-50 on latte and cappuccino
Fastest-growing order? I would have to say alternate milks are growing so fast, but oat milk seems to be taking the lead.
Strangest order? We all have our little quirks and like something different, from quarter-strength decaf latte with three sugars, hazelnut syrup, oat milk latte at 50 degrees, or extra four-shot latte is one that will keep you going all day.
Biggest day? Toward the end of the week is most popular.
Coffee machine? La Marzocco.
Menu? We offer a wide range, from latte, cappuccino, flat white, mocha, espresso, magic, long black, macchiato, ristretto, iced latte, iced coffee and affogato.
Final word? The name of our coffee says so much — ‘Morning Gorgeous’. It is a smooth, captivating blend that we are sure people will love. Roasted locally in Shepparton, it allows us to always offer the freshest coffee possible.
